Vegan Sun-Kissed Riviera French Toast Recipe:

  • 4-6 slices of your preferred bread (baguette, brioche, whole wheat, etc.)
  • 1 cup plant-based milk (almond, soy, oat, coconut, etc.)
  • 2 tablespoons chickpea flour (also known as gram flour)
  • 1 tablespoon nutritional yeast (optional, for a cheesy flavor)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt
  • Coconut oil or vegan butter for cooking
  • Fresh berries, sliced fruits, or fruit compote for topping
  • Maple syrup or agave syrup for drizzling


  1. Prepare the Batter:
  • In a mixing bowl, whisk together the plant-based milk, chickpea flour, nutritional yeast (if using), vanilla extract, ground cinnamon, and a pinch of salt until well combined. The chickpea flour will act as a binder and help create a custard-like texture.
  1. Soak the Bread:
  • Heat a non-stick skillet or griddle over medium heat and add a small amount of coconut oil or vegan butter to prevent sticking.
  • Dip each slice of bread into the batter, making sure to coat both sides evenly. Allow the bread to soak for a few seconds on each side.
  1. Cook the French Toast:
  • Place the soaked bread slices on the heated skillet and cook for 2-3 minutes on each side, or until they are golden brown and crispy.
  1. Serve:
  • Once the French toast slices are cooked, transfer them to serving plates.
  • Top with fresh berries, sliced fruits, or a fruit compote of your choice.
  • Drizzle with maple syrup or agave syrup for a touch of sweetness.
  1. Optional Garnish:
  • You can sprinkle a bit of powdered sugar, chopped nuts, or a dusting of cocoa powder over the French toast for extra flair.
